Okay. This is my year to find more quick and easy recipes my family will love. And I need your help!
Dinner prep-time is currently THE WORST TIME at our house. Both girls are roller coasting through all of their emotions from 4-5:30. The littlest one (9mo) wants to nurse her way through the emotions and the biggest one (3yo) cycles between dancing and singing at the top of her lungs and sobbing. Meanwhile husb is on his way home (or trying hard to be) and I’m trying to get a meal started while nursing and alternating time-ins and singing Daniel Tiger’s “It’s Okay To Feel Sad Sometimes.”
The. Worst. Time.
If we don’t have a dinner plan by the time the madness begins at 4, we are ordering takeout. We are takeout poor.
So starting a few days ago, I’m learning quick&easy or slow& simmering recipes to help us get dinner on the table.
