Okay. This is my year to find more quick and easy recipes my family will love. And I need your help!
Dinner prep-time is currently THE WORST TIME at our house. Both girls are roller coasting through all of their emotions from 4-5:30. The littlest one (9mo) wants to nurse her way through the emotions and the biggest one (3yo) cycles between dancing and singing at the top of her lungs and sobbing. Meanwhile husb is on his way home (or trying hard to be) and I’m trying to get a meal started while nursing and alternating time-ins and singing Daniel Tiger’s “It’s Okay To Feel Sad Sometimes.”
The. Worst. Time.
If we don’t have a dinner plan by the time the madness begins at 4, we are ordering takeout. We are takeout poor.
So starting a few days ago, I’m learning quick&easy or slow& simmering recipes to help us get dinner on the table.
Here are my success stories so far. I’ll just share the Pinterest links, since you all are going to pin them anyway. 😉 Absolute success stories on a plate:
Slow Cooker Butter Chicken: https://www.pinterest.com/pin/477240891742769482/
Rice with peas (use less salt then recommended and serve with butter chicken): https://www.pinterest.com/pin/477240891742769427/
One Pot “Hamburger Helper” (I sautéed onion before I put meat in, omit mushrooms, and add frozen peas for the last 7 minutes): https://www.pinterest.com/pin/477240891742291028/
And just so I always have greens around, I whipped this up minus the bacon. It is eat-out-of-the-mixing-bowl good…
Make these and tell me what you think! What are your favorite one-pot meals? Do you have a favorite crock pot meal? Let me know in the comments below. 👇🏽
